Nothing Bundt Cakes

With a laser-focused confectionery niche and a top-notch pun name, Nothing Bundt Cakes is the result of married co-owners Kristen and Theo Spilman's combined 40 years of culinary and hospitality experience.

"I feel like the community has received us quite well, and we fill a gap in the sense that you can get a cake that's an elevated product, but at a price point that isn't a wedding cake or an extremely artistic type of styling," Theo Spilman said.

The business came into being after the couple returned to Springfield after working in the hospitality industry in Europe for a number of years together. When family needs brought them back to the United States, Spilman said they formulated plans to open Nothing Bundt Cakes.

The bakery's specialty, besides bundt cakes of various sizes and flavors, is their method of baking cakes fresh all day long. It allows for a quick turnaround time, whether customers are just looking for a treat or are in sudden, desperate need of dessert for an occasion, Spilman said.

"We can have somebody come in literally last minute for whatever disaster or save-the-date moment, and we can take care of them in very short order," he said. "We've saved the day on last-minute weddings and helped husbands who have forgotten anniversaries or Valentine's Day."

Cakes are available in four sizes and a variety of flavors and options, but for his own part, Spilman said his favorite is still the red velvet bundt cakes.
